It is recommended to sharpen your knife on average once a month.
The Blackwell knife sharpener set contains all the parts needed to sharpen your knives quickly and accurately. The knife sharpener is suitable for chef's knives, meat knives, kitchen knives and paring knives. Serrated knives cannot be sharpened with this set. The set includes 4 sharpening stones with different grit sizes: coarse (360), medium coarse (600), fine (800) extra fine (1000).
It may take some practice, but using the knife sharpener is very easy! The following steps will make your knives sharp again:
- Screw the knife clamp and other supplies firmly onto the tray with the screw caps provided. Now you have the basis for sharpening your knife ready.
- Take the knife you want to sharpen. Secure the knife in the clamp. It is important to secure the knife as much as possible, otherwise it may shift during sharpening. This is done by turning the screw counterclockwise. The knife should protrude about 15.9 mm above the clamp.
- There are 3 lines on the clamp. Make sure the blade is flush horizontally with one of these lines.
- Determine the correct sharpening angle for the knife. You do this by moving the gear on both sides and positioning it at the correct sharpening angle. Then mount the guide bars at this position.
- Slide the whetstones over the guide bars. Choose the sharpening stone with the grit size you want to use. The blunter the knife, the coarser the first grit may be. Then take an increasingly finer grit to sharpen with.
- The sharpening can begin! Make circular sharpening strokes until you see an edge finish on the entire length of the knife. Always wipe the knife with a wet cloth before moving on to the next sharpening stone.
