Differences between white and matte black enamel

You may have noticed that Sola offers two choices for the interior of our enameled cast iron cookware. We are often asked what the differences are between the two. Our light sand-colored enamel is found in most of our cast iron products, while some have a matte black interior. Both are made from enamel, but each serves a specific function and purpose.

The signature Sola cast iron casseroles have a glossy, sand-colored enamel, which is essentially a type of glass, on the inside. This layer serves several functions and does not need to be pre-seasoned or oiled, making the maintenance of our enameled cast iron cookware easy.

The light sand-colored enamel allows you to better monitor the cooking process and is ideal for moist cooking methods. The browned bits (also known as “fond”) are easy to see on the cooking surface, so you can watch them and prevent burning. The smooth, almost glossy finish of the sand-colored enamel also helps food stick less, making cleaning hassle-free.

Another benefit of using an enamel layer is that glass is inert, meaning it does not absorb odors or flavors from your food. It’s also excellent for storing leftovers and does not react with acidic foods like tomatoes or citrus, unlike raw cast iron. Don’t worry if the sand-colored enamel gets stained during cooking – these marks are not permanent and can be easily removed.

The matte black enamel is a striking feature of many frying pans and popular grills. Many people assume this surface is raw cast iron due to the matte black interior. However, this is not the case; it is an innovative layer of glass enamel applied to the cast iron. This makes usage much easier and ensures a clean surface compared to traditional raw cast iron.

Pans with a black enamel interior, like the white enamel, do not need to be seasoned. They are perfect for grilling and searing and give your dishes a delicious caramelized crust.
