The distinctive cast iron Le Creuset Signature skillets have a shiny sand-colored enamel, which is actually a type of glass, on the inside. This layer has several functions and does not need to be greased and burned in beforehand, making maintenance of our enameled cast iron cookware easy.
The light sand-colored enamel allows you better control over the cooking process and is great for moist cooking methods. You can easily see the brown bits (also known as fond) on the bottom of the cooking surface and pay attention so they don't burn. The smooth, almost shiny finish of the sand-colored enamel also makes food less likely to stick for hassle-free cleaning.
One of the many benefits of using a layer of enamel is that glass is inert, meaning it does not absorb odors or flavors from your food. It is also great for storing leftovers and does not react with acidic foods such as tomatoes and citrus, as raw cast iron does. Don't worry if you notice that the sand-colored enamel gets stained during the cooking process! These stains are not permanent and can be easily removed.
