One of the vegetables I found in my vegetable packet every week until recently is the carrot. I made the most delicious soups, curries and stews from them. But occasionally I also incorporated them into sweet recipes. One sweet recipe that I really liked is this healthy carrot cake.

Carrot cake with banana

Slightly less sweet than a normal carrot cake, but no less delicious because of that! Good reason to take an extra slice!

Ingredients

  • 3 eggs
  • 1 very ripe banana
  • 200 gr carrot
  • 50 gr wholemeal spelt flour
  • 120 gr almond flour (or other nuts, ground)
  • 4 tbsp maple syrup
  • 1 tbsp vanilla extract or scrapings from 1 vanilla pod
  • 1 pinch baking powder (preferably cream of tartar)
  • 1 tsp cinnamon
  • 100 gr Apricot jam without sugar (forms a middle layer in the cake)
  • cream cheese, greek yogurt, cottage cheese (your choice: just how creamy you want the top layer to be)
  • a few tbsp maple syrup

Carrot cake with banana

    How to make carrot cake with banana?

    1. Line the springform pan with baking paper and grease the rim.
    2. Split the 3 eggs (put the egg whites in a bowl and the yolks in another).
    3. Finely grate the carrot and mash the banana with a fork. Add both to the egg yolks. Then add the maple syrup and vanilla extract and stir well with a mixer.
    4. Add the almond flour, spelt flour, baking powder and cinnamon and mix again. Beat the egg whites with a pinch of salt until stiff, then gently stir into the dough. Spoon the dough into the 20cm springform pan and bake the cake until done (approx. 35 minutes).
    5. Let the cake cool completely, then cut it horizontally. Brush the bottom layer with the apricot jam (as thick as you like) and put the top layer back on top.
    6. For the top layer, mix the cream cheese/Greek yogurt/ cottage cheese with maple syrup to taste. Spread this topping on the cake shortly before you eat the cake. In fact, yogurt and cottage cheese will start to soak into the dough after a while which looks less appealing....

Secretly I thought "Carrotcake" recipes always look so boring. But I am now behind what the secret of a nice carrot cake is: adding ground nuts! So I replaced part of the normal flour with almond flour. And by adding a banana, the cake became creamy too!

This whole -grain cake without refined sugar naturally tastes "healthier" and less sweet as a normal carrot cake. But all the more reasons to take a piece every day, right? Tip: Do you want to go for a gluten -free variant of this cake? Then replace the spelled flour with almond flour.
