It seemed like a challenge to me: making my own sugar-free ice cream from mango and avocado. Not only because I have never made my own ice cream before, but also because I do not have an ice cream maker (yet). Hence, after seeing Elize's recipe for lactose-free mango-avocado ice cream, I set to work on a sugar-free version.

Sugar-free mango avocado ice cream

It seemed like a challenge to me: making my own sugar-free ice cream from mango and avocado. Not only because I have never made my own ice cream before, but also because I do not (yet) have an ice cream machine. With a dash of vodka mixed in, it works just fine. Are you not allowed or willing to do this? Then use an ice cream maker anyway.

Ingredients

  • 1 ripe, large mango
  • 1 ripe avocado
  • 1 can of sugar-free coconut milk (400ml)
  • Juice of 1 ½ limes

Sugar-free mango avocado ice cream

    1. Peel the mango and cut into large pieces. Pit the avocado and also cut it into pieces
    2. Put the mango, avocado, lime juice and coconut milk in the blender and let it run for a few minutes until you have an even mixture.
    3. Then pour this mixture into the ice machine.
    4. If you do not have an ice machine and do (may) alcohol, add some vodka and pour the mixture into a plastic container. Leave the freezer for a night.
    5. Enjoy it!

Normally I am not such an ice fan, but a fruit ice cream without sugar can certainly interest me. So I went to work immediately. The mango, avocado and lemon juice went into the blender, along with a number of mint leaves. I have adjusted the recipe from Elize slightly to my taste, because she used lime juice instead of lemon juice and not a mint.  In the recipe, Elize also indicates that you can possibly sweeten the ice with, for example, Stevia, but in my opinion the ice was sweet enough through the natural fruit sugars.

If you don't have an ice machine, Elize says, you can add some vodka so that the ice does not freeze like one bonk. Unfortunately, I am alcohol -free so using vodka is not an option. Then try if it succeeds without alcohol and ice machine. During the freezing process I stirred the ice, or then the mixture, and even put it through the blender a number of times to simulate an ice machine.
