Pumpkin soup with beans

This pumpkin soup with beans is a nutritious, filling soup with an Asian twist. Tender pumpkin is combined with brown beans and flavored with garlic, paprika, ginger, cumin and a touch of cayenne pepper. After pureeing the soup, add vegetable cooking cream for a creamy texture. Perfect as a nutritious appetizer or main course, and deliciously warming for cold days!

Ingredients

  • 1 large pumpkin (1kg)
  • 200 grams brown beans (cooked)
  • 2 cloves of garlic
  • 1.5 liters of broth
  • dash of vegetable cooking cream
  • 2 teaspoons paprika powder
  • 1 teaspoon ginger powder (or piece of grated ginger)
  • 1 teaspoon cumin powder
  • generous pinch of cayenne pepper

How to make pumpkin soup with beans ?

    1. Cut the pumpkin into cubes. You can leave the skin. Press the garlic in one garlic and do this with some olive oil in a large one soup pot.
    2. Fry the garlic pieces and then add the pumpkin. Put the lid on the pan and let it simmer for about 10 minutes on the fire. Put the pumpkin every now and then.
    3. If the pumpkin is nice and soft after 10 minutes, add 1.5 liters of broth (or add water, let it boil and then add stock cubes). Add the drained beans. Let it simmer for 10 minutes.
    4. Then puree the soup with a hand blender Or put the soup in a blender. Be careful! Then put the soup back in the pan and add the herbs. Leave to bubble over low heat for a few minutes and finally add the vegetable cooking cream.
    5. Enjoy your meal!
