The tastiest mussels are something you want to make at home, of course. And to take these special shellfish off the beaten path for a change, I have two interesting mussel recipes for you. One with beer and one with wine!

Mussels with white wine or beer

Go for a spicy and spicy mussels recipe that includes red peppers, pak choi and Thai beer.

Ingredients

  • 2 kg of mussels
  • 1 to 2 red peppers
  • 1 piece of ginger
  • 1 stalk of lemongrass or sereh
  • 1 bunch of Thai basil or cilantro
  • 1 lime
  • 1 pak choi
  • 1 splash of beer of your choice e.g. Singha

Thai mussels with beer

    How do you make Thai mussels with beer?

    1. First, start by cleaning the mussels and discard the shells that remain open after you tap on them. These are no longer good.
    2. Cut the pak choi into strips and finely chop the Thai basil or cilantro. Next, grate the zest of the lime, and cut the lime into wedges to serve later with the dish.
    3. Sauté the chilies and ginger in some (olive) oil in a large wok or special mussel pan. Crush the lemongrass (or sereh) with the top of your knife and chop into two or three pieces. Put this directly into the pan as well. 
    4. Add the mussels with the pak choi and Thai basil.
    5. Deglaze with the splash of beer and simmer for about five minutes. Shake the pan or stir in between. Serve the dish immediately.

Mussels recipe with beer

Beer is generally fuller in taste than wine. That is why it can be combined well with sturdy flavors. That is why we opted for this mussels recipe with beer for fresh-spicy Thai herbs. With the Thai mussels we opted for the Thai beer Singha, but you can also choose a Dutch (blonde) beer yourself.

If you like spicy, use two red peppers including the seeds. If you find two peppers too spicy, use only one, or leave the seeds out. By allowing the lemongrass (or sereh) to be stewed, delicious freshly sour aromas are released. It is also reminiscent of ginger. That is why the combination of Sereh, Ginger and Lime works so well! All flavors merge harmoniously and reinforce each other. 

Mussels recipe with wine

The most traditional variant of a mussels recipe is with wine. With almost everything we eat from the sea, white wine forms a good marriage. To give a special twist to this classic combination, we use something different from the standard mussel vegetables.
