This gluten-free spicy apple pie is he-all-perfect for this time of year. I got the inspiration during my trip to Malta, where I ate a fantastically delicious apple pie. The taste was spicy and immediately reminded me of autumn and winter! And although it was still 30 degrees in Malta, when I returned home to the Netherlands it already turned out to be real autumn. Therefore, I immediately wanted to make this delicious spicy apple pie.

This spicy apple pie is a delicious winter version with a fresh twist thanks to the lime juice in the filling. The base, made from almond flour and gluten-free baking flour, is flavored with speculaas spices, cinnamon, cardamom, and cloves. The apple filling is topped off with a crisp crumble of oat flakes and almond flour. Perfect for a cozy fall or winter moment with friends and family!

Ingredients

  • Bottom:
  • 100 grams of almond flour
  • 220 grams of gluten-free baking flour
  • 40 grams of honey
  • 125 grams of coconut oil
  • 1 egg
  • 2 teaspoons speculaaskruiden
  • 1 teaspoon cinnamon
  • pinch of cardamom
  • 1/2 teaspoon ground cloves
  • rind of half a lime
  • pinch of salt
  • Filling:
  • 1 kg of golden oranges
  • juice of 1 lime
  • 1 teaspoon specula spice
  • 1 teaspoon cinnamon
  • Crumble:
  • 80 grams of almond flour
  • 60 grams of oat flakes
  • 20 grams of oat flour
  • 30 grams of honey
  • 50 grams of coconut oil
  • 1 teaspoon cinnamon
  • 1 teaspoon specula spice
  • 1/2 teaspoon ground cloves

How to make a spicy apple pie?

    1. Mix the almond flour with gluten -free flour and add cinnamon, gingerbread spices, cardamom, clove and salt. Grate the skin of half a lime above the bowl. Then add the coconut oil, honey and the egg and mix until the dough has a nice structure. Make it a ball and place it covered (eg with cling film) in the fridge.
    2. Meanwhile, continue with the crumb dough. Mix the almond flour with oat flakes and oatmeal, cinnamon, gingerbread spices and ground clove. Then add the honey and coconut oil and knead with your hands into a dough. Put this aside.
    3. Preheat the oven to 180 degrees.
    4. Peel the apples. Remove the cores and cut into small pieces. Put this in a bowl and add the lime juice, cinnamon and the gingerbread spices. Mix this together.
    5. Grease a 28 cm spring form with olive oil or butter. Take the bottom dough from the refrigerator and divide the dough over the spring form. Make sure the edges get nice and high and preferably the same thick everywhere.
    6. Then divide the apple mixture over the spring form and gently push. You may have a little bit left; You can nibble this when the cake is in the oven.
    7. Then divide the crumb mixture in chunks over the spring form. Everything is allowed so make sure the cake is well covered.
    8. Bake in the oven for 40-50 minutes. If the top gets too dark, you can cover the cake with some aluminum foil and put it back in the oven.
