The star theme also appears often in the store and these Gluten Free and Sugar Free Christmas Cookies are super fun to put on the table during the holidays.

Do you have family or friends coming over during Christmas who are not allowed certain things? Then these Sugar-Free and Gluten-Free Christmas Cookies are a really fun (and delicious) treat!

Ingredients

  • 100 grams almond flour
  • 50 grams of rice flour
  • 100 grams Medjoul dates (pitted)
  • 40 grams of coconut oil
  • 1 teaspoon speculaaskruiden
  • 1 teaspoon cocoa powder
  • 1 teaspoon vanilla extract
  • 25 grams of hazelnuts

Christmas Cookies

    1. Preheat the oven to 175 degrees
    2. Put the almond flour and rice flour in a large bowl. Grind the (peat) dates in the food processor.
    3. Add the dates with the flour. Melt the coconut oil in a separate bowl.
    4. Pour the coconut oil in the dates and flour and then also add the gingerbread spices, cocoa powder and vanilla extract. Mix the dough well until it becomes an even mixture; It can be something crumbling.
    5. Do you have a star cookie shape? Nice, use it then. If not, just like me, cut a star from a piece of paper and use it as a shape.
    6. Fold the dough, about 1 to 2 cm thick, and press a mold or put your star paper on the dough and cut around with a knife.
    7. Empty the cookies on a baking sheet covered with baking paper.
    8. Now grind the hazelnuts in a food processor and carefully press them into the cookies.
    9. Bake the cookies crispy in the oven for 13-14 minutes.
