Pepernoten, how I love them! Since I first made my own peppernuts a few years ago, the ones from the store are actually a bit mwoah. Making them myself is much tastier! This time I went to work with (gluten-free) oatmeal and made gluten-free oatmeal cookies. And they were very tasty! Prefer something else? Try these gluten free pepernoten and these chocolate pepernoten!

Gluten-free spiced nuts

The oatmeal makes your pepernoten just a touch healthier. Less sugars and lots of fiber!

Ingredients

  • 175 grams of gluten-free oat flour or finely ground gluten-free oatmeal
  • 5 tablespoons of almond milk
  • 12 grams of speculaas spices
  • 60 grams of coconut oil
  • 5 dates
  • 6 grams of cinnamon
  • 2 tablespoons honey
  • pinch of salt
  • 2 teaspoons baking powder

Gluten-free spiced nuts

    1. Preheat the oven to 160 degrees
    2. Pit the dates. Put this together with the vegetable milk in the food processor and grind.
    3. Then add the oatmeal; For this I just blended gluten -free oatmeal to flour in the food processor. Also add the gingerbread spices, coconut oil, cinnamon, honey, salt and baking powder and let it mix into an even dough.
    4. Cover a baking sheet with baking paper. Turn small balls from the dough; The spice nuts are still rising, so don't make them too big.
    5. Bake the spice nuts in about 20 minutes. Allow to cool well. Enjoy!

For this recipe I was inspired by a website that makes all kinds of oatmeal recipes. Oatmeal contains natural sugars and lots of fiber and is therefore a healthy alternative to "white" flour.

To sweeten the spice nuts I use dates and a little bit of honey. You can also use date syrup, agave syrup or coconut blossom sugar as a sweetener; Just what you find easy.
