Dumplings are patches of dough with a savory filling that can be folded in various ways and styles. They are also considered the Chinese version of ravioli. The filling can include ingredients such as minced pork, Chinese cabbage and spring onions, but countless other variations are possible. Dumplings are suitable as a snack, for lunch, as a snack or as an evening meal.

Making Dumplings

Ingredients

  • 125 g peeled shrimp (about 250 g unpeeled)
  • 1 spring onion, finely chopped
  • 75 g Chinese cabbage, 5 mm cubes
  • 1 clove of garlic, finely chopped
  • ½ tsp grated fresh ginger
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • Pinch of pepper
  • ½ tsp sugar
  • ½ tsp sake or dry sherry
  • 15 dumpling dough sheets (10 cm diameter)
  • FOR THE SAUS:
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Dumplings

    1. Let the dumpling defrost sheets in the package or drying out under a sheet of foil.
    2. Pat the shrimp dry and chop them briefly in a food processor or with a knife (this takes a little longer). It still has to keep some structure, so don't grind it too well. 
    3. Put the chopped shrimp in a bowl and mix in the rest of the ingredients. Store the filling until use in the refrigerator.
    4. Mix the ingredients of the dip sauce and also put it in the fridge.
    5. Grab the dumpling maker. Lay it open and sprinkle with a little flour against sticking the sheets. Then place a sheet on it and place 2 tsp filling in the middle of the dough sheet. Wet the edge a little and close the dumpling maker, so that the edges stick together!
    6. When all dumplings are filled, it's time to steam them. Take a frying pan for this. Heat a layer of water in this. Place the steam basket in the pan, make sure that the bottom is not completely under water. Place the dumplings on a piece of baking paper in the steam basket. Make sure that the dumplings are not against each other or the edge, they stick. You can also stack multiple steam baskets on top of each other, so that you can steam more at the same time. It takes about 5 minutes until the dumplings are cooked!
    7. Serve with the dip sauce and possibly with some fresh chives.
    8. Eat them immediately when the dumplings are still nice and warm!

    Gyoza dough sheets are for sale in the freezer compartment of the Toko and the larger supermarkets. You can also make them yourself if you wish!

    Tip!

    In this recipe we use dumpling sheets and a shrimp filling, but the possibilities for variation are endless. For example, you can try Wontondeeg with a Chinese filling, puff pastry with apple filling, or homemade pasta dough with a filling of sun -dried tomatoes.
