Stevia can be quite tricky to bake with, especially in combination with gluten-free, because you can't give the "substance" and filling to a dough that regular sugar does. I have used stevia drops until now, but was not a fan of them, mainly because of the bitter aftertaste. Recently, however, I got to try a type of stevia that looks just like regular crystal sugar. I used the stevia as a substitute for coconut blossom sugar and made Chocolatechip Peanut Butter Cookies with it and was very curious to see if I liked the taste.

Chocolate chip peanut butter cookies

These cookies sweetened with stevia are insane. And suitable for diabetics as well as people who like to eat sugar-free.

Ingredients

  • 120 grams of spelt flour (or buckwheat flour, for gluten-free cookies)
  • 60 grams of gluten-free oat flakes
  • 140 grams of peanut butter
  • 80 grams of coconut oil
  • 3 tablespoons stevia granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon tartar powder
  • 1/2 teaspoon baking soda
  • 40 grams of 92% chocolate (Vivani)
  • pinch of sea salt

Chocolate chip peanut butter cookies

    1. Preheat the oven to 170 degrees
    2.  Melt the coconut oil and mix it with the stevia, vanilla extract, peanut butter and an egg. In a separate bowl, add the oat flakes to the spelled flour, baking soda, baking powder and pinch of salt.
    3. Then mix all dry ingredients with the coconut oil mixture and then knead well with your hands. Finely chop the chocolate and mix it into the cookie dough.
    4. Cover a baking sheet with baking paper and make large cakes about 2 cm thick on it. Bake them in 10-15 minutes and let cool well. Enjoy!

The cookies are amazing! Not super sweet and the peanut butter is also not predominant. I was positively surprised by this Stevia crystal "sugar". Sugar in brackets, of course, because stevia is made from the leaves of the Stevia Plant. Stevia has become very popular in a short time and unfortunately there are also products under the name Stevia that largely consist of other ingredients, such as maltodextrin a glorified sugar. So pay attention to this!

Pure Stevia is a good sugar substitute in recipes, because it has no influence on the glycemic index, or your blood sugar level. That makes it suitable for diabetics and people who want to eat sugar -free. With the stevia that looks like normal tables sugar, I made this delicious chocolate chip Peanutbutter cookies.
