Yay, last week was my birthday, so happy birthday to me! And I say treat to cake! I've been looking forward to whipping up a delicious cake for weeks. And secretly I'm not just looking forward to that cake, I'm just looking forward to my birthday. I used to be unable to sleep because of nerves. Now that's a little different, but still I can really look forward to it. And I even still find it a little exciting, because I love getting presents. Always exciting again what you get from everyone. So those "childhood feelings" are far from over for me! To treat everyone on my turn, I made this mega yummy healthy chocolate cake with vanilla for them.

Chocolate cake with vanilla

Chocolate, nuts and vanilla ... a heavenly combination. Enjoy it without feeling guilty about a load of sugar. This cake is free of refined sugars.

Ingredients

  • First layer:
  • 200 grams of almonds
  • 120 grams of pitted medjool dates
  • 40 grams of coconut flakes
  • Second layer:
  • 200 grams of cashews
  • 150 grams of pitted medjool dates
  • 50 grams of cocoa powder
  • 240 ml water
  • 120 ml coconut oil
  • Third layer:
  • 200 grams of cashews
  • 100 ml of coconut oil
  • 50 ml honey
  • 120 ml water
  • pith of one vanilla pod (or half teaspoon of vanilla powder)
  • Additional topping:
  • Dark chocolate - 50g (optional)

Chocolate cake with vanilla

    1. Put all the ingredients of the 1st layer in the blender or food processor. Grind it until it is fine and crumbly, but sticky. Divide this nut mixture over the bottom of the cake pan and press well.
    2. Wash your blender/food processor and put all the ingredients for layer 2 in the blender/food processor. Then divide this over the 1st layer.
    3. Clean your blender/food processor again and add all the ingredients for layer 3 and then gently pour it to layer 2.
    4. Optional: Make chocolate curls from your strip of pure chocolate with a knife. You can do as much on it as you want of course. Let your healthy chocolate cake set in the fridge for 4 hours and ... Enjoy! Easy right? So hop into the kitchen!

I love socializing, laughter and most importantly .. food. That is why I ensure that there are enough healthy snacks and drinks on the table. Secretly I always have a goal on my birthday: others inspire that healthy eating can also be festive, fun and tasty. I come from a family with a lot of Burgundian gourmets, so I am curious if they are going to be happy with my Healthy Birthday Party.

I know at least one thing for sure: from this mega tasty healthy chocolate cake with vanilla they really enjoy, it can't be otherwise! And they will probably not realize that the cake is completely gluten -free and lactose -free and also free of refined sugar. Enjoy healthy!
