Apple-pear pie

Besides being a very simple pie to make, the pie is also deliciously sweet due to the filling of apples and pears.

Ingredients

  • 175 grams spelt flour
  • 120 grams almond flour
  • 2 tablespoons coconut blossom sugar
  • 2 tablespoons vanilla extract
  • 100 grams of coconut oil
  • 2 tablespoons water
  • Grater of half a lemon
  • Pinch of salt
  • For the filling
  • 1 ½ jar Pure Pulp or Pure Compote from Hak
  • 450 grams pears, in pieces
  • 2 teaspoons lemon
  • 3 ½ tablespoons arrowroot
  • 2 teaspoons cinnamon

Apple-pear pie

    1. Preheat the oven to 180 degrees
    2. Put spelled flour, almond flour, coconut blossom sugar, lemon zest and pinch of salt. Melt the coconut oil in a separate bowl.
    3. Add the melted coconut oil, vanilla extract and the water to the flour and mix. Knead the dough well until it is an even whole. Does the dough remain (too) sticky? Add some extra spelled flour.
    4. Spread a spring form of +/- 22 cm well with coconut oil and then cover the shape with the dough, about half a cm thick.
    5. Bake the bottom for 15-18 minutes.
    6. Meanwhile, put the apple sauce and the pear pieces with the lemon juice and cinnamon in a pan and bring to the kook. Let this simmer until the pieces of pear are soft.
    7. Then mix the mous and pear with a hand blender until smooth; Make sure there are no more (large) pieces of pear in the filling. Remove the pan from the heat and add the arrowroot while stirring.
    8. Allow the mush to cool for half an hour. Then fill the cake pan with the apple pear filling and let the cake set in the fridge. If necessary, decorate with cinnamon powder in a nice shape.
