How delicious do these strawberry muffins look? They taste just as fruity as they look and I think they are perfect for summer. Kind of a special summer muffin, because in the middle of winter I would probably crave a nice chocolate cinnamon muffin again. But these Gluten Free Strawberry Muffins with Coconut Flour are just great right now; fresh, summery and healthy too.

Ingredients

  • 50 grams of coconut flour
  • 25 grams almond flour
  • 1 tablespoon arrowroot (or cornstarch)
  • 1 teaspoon tartar powder
  • 1 tablespoon coconut blossom sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1 tablespoon coconut oil
  • 125 grams of fresh strawberries
  • 4 eggs
  • pinch of salt

Strawberry muffins with coconut flour

    1. Preheat the oven to 175 degrees
    2. Mix all dry ingredients in a large mixing bowl.
    3. Melt the coconut oil and beat the eggs in another bowl. Add the coconut oil and eggs to the dry ingredients, along with the vanilla extract and mix well, with a hand mixer, for example.
    4. Finally, scoop the strawberries into the batter and divide the mixture over the molds. The batter does not rise so much, so your shapes can be full if you want large muffins.
    5. Bake in the oven for about 20-25 minutes and then let it cool well before you adorn them. Enjoy it!

In fact, coconut flour is carbohydrate poor and, unlike many other gluten -free flour species, gives a nice structure to your baking. The coconut flour that I use in this recipe can be found in different nature stores throughout the Netherlands. The price of this coconut flour was not too bad: 4.50 for a 500gram suit. That is less than what I normally paid in the store for a pack of almond flour. In addition, I think it is a nice idea that all products from the new band are organic.

For a while I wanted to bake something with coconut flour so I am happy with this very first "experiment". These strawberry muffins are certainly very tasty and successful, so I will certainly use coconut flour more often. Last week I also baked sugar -free banana bread, which will soon be on the blog (Yummy!).
