Vegetarian gnocchi casserole

Vegetarian gnocchi casserole is a delicious comfort food full of vegetables, perfect for a weeknight. Gnocchi is baked and mixed with zucchini, onion, cherry tomatoes and diced tomatoes, and seasoned with Italian herbs. The casserole is topped with slices of mozzarella and baked for 20 minutes until the cheese is nicely melted.

Ingredients

  • 500 grams of gnocchi
  • 1 zucchini
  • 250 grams cherry tomatoes
  • 400 grams of diced tomatoes
  • 1 onion
  • 1 ball of mozzarella
  • 2 teaspoons Italian herbs to taste
  • Pinch of salt and pepper to taste

How to make a vegetarian gnocchi casserole?

    1. Heat the oven to 200 degrees.
    2. Fry the gnocchi with some olive oil in the frying pan over medium heat. Stir regularly.
    3. Meanwhile, cut the zucchini into cubes, chop the onion and cut the cherry tomatoes into quarters.
    4. If the gnocchi has a little color, add the shredded onion. After a few minutes, add the zucchini cubes and fry for about 5 minutes. Now add the tomato cubes and let it simmer.
    5. Finally, add the cherry tomatoes and the Italian herbs, pepper and salt.
    6. Put the gnocchi in one baking dish And toppings with slices of mozzarella. Bake for 20 minutes in a preheated oven. Enjoy your meal!
