This is only the first poké-bowl recipe, so you could argue that once again I am mercilessly behind the trends. Maaaaar, I've been making sushi salads, or sushi in a bowl, as we call it here at home, for years. And really, it's exactly the same thing, because it boils down to simply putting all kinds of ingredients for traditional sushi in a bowl bowl. And so now it's called poké bowl. I'm fine with it, because I love everything about sushi. And because this poké bowl with salmon and avocado is also ready in 15 minutes, it's on the menu here almost every week.

Ingredients

  • 250 grams of rice
  • 300 grams of salmon fillet
  • 8 radishes
  • half a cucumber
  • 1 carrot
  • 1 avocado
  • 2 nori sheets
  • 3 spring onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon wasabi
  • splash of water
  • tamari (gluten-free soy sauce) or soy sauce

Poké bowl with salmon and avocado

    How do you make a Poké bowl with salmon and avocado?

    Bring the rice to the kook with enough water and simmer gently on low heat.

    Meanwhile, slice the radishes and spring onion. The cucumber may be diced or julienne, as may the carrot. Peel the avocado and cut into cubes.

    Cut the salmon into cubes.

    Make a sauce of the mayonnaise and wasabi and add a splash of water to thicken.

    Cut the nori sheets into small pieces.

    When the rice is ready, spoon that into a bowl. Put some tamari on top. Then divide the radishes, cucumber, avocado, carrot and salmon over the rice and finally the spring onions. Finish with wasabi mayonnaise and nori.

    Variation tip: add mango, red cabbage, seaweed, red beets, chickpeas or cucumber slices

My friend is home late, somewhere between 7 and 8. I am always at home around half past five and then it is of course the most convenient that I am already in advance kook. Since I also just hung hunger from my work, there is always something on the table on workdays that lasts a maximum of 30 minutes.
