There are countless different types of pasta and a different type of sauce goes best with each one! These large shells (conchiglioni) are meant to be filled, this can be based on a meat filling or vegetable filling. This recipe is vegetarian and here you use spinach combined with ricotta. You fill the cooked shells with the tomato/meat sauce and bake them briefly in the oven at the end.

Ingredients

  • About 20 large pasta shells
  • 300 gr spinach (fresh or frozen)
  • 250 gr ricotta
  • 1 clove of garlic
  • 1 red onion
  • 10 cherry tomatoes
  • 2 handfuls of toasted pine nuts
  • Grated Parmesan cheese to taste
  • Sprig of fresh basil
  • Pepper & salt
  • Olive oil

    How to make the pasta with ricotta and spinach?

    1. Preheat the oven dish to 180 °C and grease the oven dish with some olive oil.
    2. Bring a generous amount of water to the kook and kook here the pasta shells in it until they are al dente. 
    3. Meanwhile, make the mixture: start by chopping the onion and garlic.
    4. Heat some oil in the frying pan and sauté the onion and garlic in it. Add the spinach and let it shrink a little. Finally, stir in the ricotta and season with salt & pepper.
    5. Divide the pasta shells among the baking dish and fill them with the mixture. Place the tomatoes between the shells and sprinkle with Parmesan cheese.
    6. Put the dish, covered with aluminum foil, in the oven for 20 minutes first. Remove the foil and return the dish to the oven for another 10 minutes.
    7. Meanwhile, grate some more Parmesan and roast the pine nuts. Serve the pasta with some extra cheese, pine nuts and fresh basil. Buon appetito!

Tip!

These large pasta shells are also delicious with a minced meat filling in tomato sauce!
