Rice flour is not the easiest flour to bake with. At least, I think so, since my rice flour cake 4.0 was still not good enough to be put online. Where there is a will, there is a way, so that rice flour cake is coming. But these gluten-free rice flour brownies without refined sugars are a big hit.

Rice flour brownies

Creamy, rich chocolate flavor and still relatively healthy, for a brownie at least. The recipe is super quick, so you'll have great brownies on the table in no time.

Ingredients

  • 55 grams of coconut oil
  • 50 grams of olive oil
  • 50 grams of rice flour
  • 10 grams ketan flour (sticky rice flour)
  • 85 grams of dark chocolate
  • 115 grams of coconut blossom sugar
  • 10 grams of cocoa nibs
  • 2 eggs
  • 1 tablespoon vanilla extract

Rice flour brownies

    1. Preheat the oven to 150 degrees
    2. Put the coconut oil, olive oil and chocolate in a bowl and melt au bain marie until it is a nice mixture and the chocolate is completely melted.
    3. In a separate bowl, mix the eggs, sugar, vanilla extract and the flour and mix this well. Add the chocolate mixture here and the cocoa nibs and mix another minute by hand mixer.
    4. Pour the mixture in a square shape covered with baking paper and bake in the oven for about 15-18 minutes.

In the meantime, of course, I sometimes want to bake something tasty with rice flour that is actually successful. And these gluten -free rice flour brownies are perfect. Perfect? Yes real. Seamy, rich chocolate flavor and yet relatively healthy. Although I have to be honest and say that these brownies contain a little more calories than, for example, an oatmeal cookie. But there is no refined sugar, butter or wheat in it, so for a brownie it is quite a healthy boy.

I also use Vivani chocolate for these brownies, and the 92% cocoa. It contains coconut blossom sugar instead of refined sugar and has a rich, pure taste. Yummy!
