As a colleague of mine described very nicely, with a little empathy and a good recipe book, you can always bake the most delicious things. Inspired by her recipe for banana muffins, I went to work on my own variation and tadaaaa: gluten-free banana muffins without refined sugar.

Just sweet enough and you can just get them out of the mold decently. I am very happy with this recipe. Hope you also enjoy these gluten-free banana muffins without refined sugar!

Ingredients

  • 125 grams of almond flour
  • 100 grams buckwheat flour
  • 50 grams of coconut oil
  • 30 grams of coconut blossom sugar
  • 2 large (or 3 smaller) ripe bananas
  • 1 egg
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Banana muffins

    1. Preheat the oven to 200 degrees
    2. Put the following dry ingredients in a large bowl: almond flour, buckwheat flour, cinnamon, baking powder and baking soda.
    3. Mack the bananas.
    4. Melt the coconut oil and mix in the egg and coconut blossom sugar.
    5. Pour this mixture into the flour and add the mashed bananas. Mix this well and add the vanilla extra.
    6. Spoon the mix of muffin shapes with a spoon and bake the muffins in the oven in 15-20 minutes.
