What is the difference between wood dust, wood chips and wood chunks for smoking?

The difference between smoke dust, chips and chunks is primarily the structure. Wood dust is fine and somewhat reminiscent of sawdust. Wood dust is perfect for cold smoking salmon, for example. Wood chips are visibly coarser and are mainly used in smokers. Wood chunks are ideal for the BBQ. This is because they are a lot bigger than wood chips and therefore do not burn up as quickly. Think of the chunks as charcoals that you put between your usual BBQ fuel.

Which BBQ wood should I use?

Your personal taste and what you plan on preparing are determining factors in deciding which type of BBQ wood to use. Of course, there are a some combinations that are simply made for each other. For example, beech is a wonderful, neutral wood that goes perfectly with fish and vegetables. On the other hand, red wine and port offer beautiful, sweet flavours.
