What is a tajine?
The tajine is originally an earthenware casserole from North Africa. Dishes prepared in a tajine bear the same name. Tajines have their origins in Berber cuisine, but are one of the best-known dishes in Moroccan cuisine.
The tajine is a dish with a lid that is generally conical, but can also be found with a spherical lid. In both cases, the lid is essential for stewing. The cooking process creates steam, which condenses on the lid and returns to the dish.
How to use a tajine?
If you are using a tajine for the first time, we recommend soaking it in cold water for 24 hours. This allows the utensil to withstand the heat of the fire, which considerably reduces the risk of cracking. We recommend using a flame spreader to minimize the risk of cracking. After soaking, you can coat the bottom of the tajine with a layer of vegetable oil. Then put the tajine on a low heat until the oil has penetrated it, to create a natural non-stick coating so that you can use your tajine without any problems.
Induction tajine
A casserole is generally still used in the traditional way, on a gas cooker or even on charcoal. Today, there are also induction tajines, to combine modernity with the preservation of authentic taste. The French brand Le Creuset, for example, produces cast-iron tajines that are suitable for all heat sources. These tajines are available in different colors and sizes, so there's a tajine to suit every household. What's more, an induction tajine stays hot for longer than the traditional variant, thanks to its preserving material. Be inspired by our wide range of Le Creuset tajines and order quickly from Cookinglife!
Tip: for an earthenware Sareva tajine, use an induction adapter!
The Emile Henry tajine
Looking for an authentic-looking tajine? The Emile Henry tajine is the best solution. This casserole is much easier to use than the traditional version. No pre-treatment is required, so the tajine is ready to use straight away. However, it is advisable to cook it in advance to reduce the risk of cracks! What's more, the Emile Henry tajine is available in different colours and sizes, so every home cook can find the tajine that's right for them.
