Pans with a ceramic non-stick coating can withstand temperatures up to 400℃ and provide a crispy layer around your ingredients. This makes these pans especially suitable for frying meat and vegetables. The ceramic coating must be cleaned by hand and is therefore not dishwasher safe. Is the pan discolored? Then boil some water and vinegar in it to get it shiny clean again.
In normal use, a pan does not get hotter than 230 ℃. If you leave the pan on the fire without ingredients or put the pan on high heat for a long time, the temperature does rise to above that. Keep this in mind when choosing the appropriate pan.
