You can also just eat healthy to your heart's content for on or with the BBQ. Leave out the fatty pork sausages and get a little creative in the kitchen yourself and without too much effort you can make BBQ healthier than you might think. Last weeks I have posted several gluten-free recipes and today another tasty recipe joins them: BBQ chicken skewer with homemade peanut sauce.

BBQ chicken skewer with homemade peanut sauce

Healthy food goes great from the BBQ. Especially with these skewers that you make entirely yourself with pure ingredients, even the peanut sauce.

Ingredients

  • 300 grams of chicken breast
  • dash of olive oil
  • 1 teaspoon cumin seed
  • 1 teaspoon tamari (gluten-free soy sauce)
  • 150 ml coconut milk
  • 2 shallots
  • 2 tablespoons peanut butter
  • half a red pepper

BBQ chicken skewer with homemade peanut sauce

    1. Cut the chicken fillet into large cubes and marinate it for about half an hour (longer) in a mixture of olive oil, cumin seeds and tamari. Then thread them on a large wooden skewer.
    2. Chop the shallots and the red pepper and fry them in a saucepan. Add the coconut milk and two tablespoons of peanut butter and stir well.
    3. When it becomes an even sauce, it is already ready. However, if the sauce is too thin, add a little more peanut butter (per teaspoon), or some coconut milk if the mixture stays too thick. You can always put a little bit of sambal through it if you like nice and spicy peanut sauce.
    4. Place the chicken skewers on the BBQ and let them cook in 10-15 minutes. Serve with your homemade peanut sauce, enjoy your meal!
