Skewered Chicken Piri Piri

with chili sauce and carrot

  • Food processor with chopper
  • Grill pan or barbecue
  • Serving glasses
  • dinner plates or bbq-plates

Ingredients

  • 600 g chicken thigh in pieces
  • 80 ml extra virgin olive oil
  • juice of 1 small lemon
  • 6 garlic cloves, peeled
  • 3 red peppers
  • 1 bay leaf
  • grated carrot
  • Chili sauce
  • Lettuce

Skewered Chicken Piri Piri

    1. Add all the ingredients for the Piri Piri (except the chicken) in the food processor and grind it into a smooth pasta.
    2. Put the chicken and piri piri marinade (you can keep a little bit of marinade separate to serve with the chicken skewers later) in a bowl and season well with sea salt. 
    3. Stir it together and put it covered in the fridge to marinate, at least 3 hours, but preferably a whole night.
    4. Thread the chicken thigh on skewers and grill them golden brown and cooked on the barbecue, or in a - light with oil greased - grill pan.
    5. Serve them in the serving glasses on a bed of lettuce, sprinkle some grated carrot over it and serve a chili sauce next to it for dipping!
