Cooking Asparagus

Ingredients:

  • 2 kg of fresh white asparagus
  • 6 medium eggs
  • 125 g unsalted butter
  • 15 g fresh curly parsley
  • 200 g slices of ham

Method:

Peel the asparagus from just under the head to the base of the stem. Then cut around 2 cm off the stem. Bring a pot of salted water to the boil and cook the asparagus for 10 minutes or until cooked through. Remove them from the pan and place in a bowl. In the meantime, hard boil the eggs for 8 minutes. Then place them immediately in cold water and start peeling. Slice the eggs into small pieces with an egg slicer. Place the butter in a saucepan and allow to melt slowly on a low heat. In the meantime, finely chop the parsley. Sprinkle the ham, egg, melted butter and parsley over the asparagus and, last but most certainly not least, enjoy!
