The ceramic sharpening steel is perfect for daily maintenance of your knives. It is ideal for keeping good knives that extra bit sharp. During cutting, tiny burrs form on the edge. These irregularities cause the knife to have more difficulty cutting through the product because there is more resistance. With the ceramic sharpening steel, you straighten out all those burrs, allowing the knife to cut smoothly through your food again.
With a ceramic sharpening steel, you ensure that the metal particles are neatly realigned without the knife itself wearing out. Unlike a steel sharpening steel, a ceramic sharpening steel removes more material. A ceramic rod is therefore recommended for knives made of harder types of steel; for example, think of Japanese knives that are so hard that a steel sharpening steel is too soft to have an effect on the steel. The Cookinglife Ceramic Sharpening Steel has a length of 25cm, making it a great choice for larger chef's knives as well.
