This Kai Shun Classic Filleting Knife has a stainless, damascus steel blade of 10 cm with a hardness of 61-62 HRC. The blade consists of 32 layers of steel, making the knife highly resistant to corrosion and ensuring it remains sharp. This also creates the characteristic semi-glossy pattern that gives the knives their beautiful, classic Japanese appearance.
Use the filleting knife for filleting fish, removing bones from fish, or cutting thin strips of meat. The pakka wood handle completely encloses the blade, preventing the handle from coming loose and protecting it from dirt. The knives are manually sharpened before being sold, ensuring that each one is razor sharp.
