The Sinterklaas period. Nothing is harder than walking through the supermarket and having to bypass left and right of those advertising pillars full of pepernoten, speculaas chunks or marzipan. Unless you have your own recipe for speculaas muffins, which are not only just as delicious as what you buy at the store, but also much healthier. These wheat-free speculoos muffins without refined sugar are simple and quick to make; in less than half an hour they'll be cooling in front of you.

Speculoos muffins

bowl Get through the St. Nicholas season right with these delicious speculaas muffins. They are wheat and lactose free and easy to make gluten free. Everyone will enjoy them!

Ingredients

  • 100 grams of almond flour
  • 100 grams spelt flour
  • 60 grams of coconut blossom sugar
  • 18 drops of stevia
  • 75 grams of coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon (tartar) baking powder
  • 15 grams of speculaaskruiden
  • 2 eggs

Speculoos muffins

    How do you make speculoos muffins?

    1. Preheat the oven to 150 degrees
    2. Put all the dry ingredients in a bowl (spelt flour, almond flour, coconut blossom sugar, baking soda, baking powder and spice).
    3. Melt the coconut oil separately.
    4. Add the coconut oil and vanilla extract and stir the mixture.
    5. Beat the eggs until a fluffy mixture forms, then gently spoon it into the dough. Mix gently but well and then spoon the mixture into muffin baking cups.
    6. Place these in the oven and bake for about 18 minutes until nicely golden brown and cooked.
    7. Let the muffins cool and enjoy!

They are not standard gluten -free, but they are wheat -free. Do you want to make a gluten -free variant? Then simply only use almond flour, or 150 grams of almond flour and 50 grams of gluten -free self -rising flour.  And if you don't have a stevia in the house, you can omit this and add a little more coconut blossom sugar (85 grams instead of 60).

I made a whole load of these muffins (you make about 12 with this recipe) for our housewarming last week and they were very popular! Certainly the Speculaas Smaak found my friends successful and special to taste in muffins. They are super nice muffins to put on the table during Sinterklaas. They are sugar -free, wheat -free, lactose -free and possibly gluten -free, so almost everyone will be able to enjoy it!
