Previously there was a post online in which I made astrawberry raspberry piebaked from my great-grandmother's antique cookbook. This gluten-free and sugar-free cake from Grandma is also based on a recipe from that book, although gluten-free and coconut oil were not really considered in those days. I have to honestly admit that I'm glad this cake turned out. Not only does it look beautiful, it tastes delicious.

Gluten-free and sugar-free cake from grandma

Grandma's gluten-free and sugar-free cake is a timeless and healthy snack made with self-rising gluten-free baking flour, coconut oil, agave syrup and eggs. The addition of coconut zest and lemon zest gives the cake a delicious flavor, while soy milk and vanilla extract provide an airy texture. Perfect for serving lukewarm, this cake is ideal for special occasions or just as a treat for the whole family.

  • Cake form of medium size (about 26 cm)

Ingredients

  • 200gr (gluten-free) self-rising baking flour
  • 100gr coconut oil
  • 125ml agave syrup
  • 2 eggs
  • 80ml soy milk
  • 1 teaspoon vanilla extract
  • 2 tablespoon coconut rasp
  • grated zest of half a lemon
  • pinch of salt

How to make Grandma's gluten- and sugar-free cake.

    1. Prepare a greased baking tin. Preheat the oven to 150 degrees
    2. First melt the coconut oil and put it in a large mixing bowl. Then add the 2 eggs and the agave syrup. Mix this with a hand mixer.
    3. In a separate bowl, put the flour with the lemon zest, coconut grater and the salt.
    4. Then scoop the flour through the egg-mix and add the soy milk and the vanilla extract in 2 times. Mix this with the hand mixer for 1-2 minutes until a smooth mixture.
    5. Pour the mixture into the baking tin and bake the cake in the oven for 70 minutes. Keep an eye on it, because the baking time can differ per oven.
    6. Take the cake out of the oven and let it stand to get firmer. Then remove the cake from the baking pan and let it cool on a grid for a while. Enjoy it!
