Next Friday is Valentine's Day again and I like nothing better than surprising someone with yummy homemade cookies. Isn't that much nicer than a card or a flower? And with these Gluten-Free Chocolate Chip Cookies, you're pretty much guaranteed that everyone will get to taste them; after all, in addition to being gluten-free, they're also dairy-free and free of refined sugars.

Chocolate chip cookies

When it's almost Valentine's Day, these cookies are a wonderful surprise. Something a little different than flowers or a card. Besides being gluten-free, they are also dairy-free and without refined sugars.

Ingredients

  • 120 grams of buckwheat flour
  • 80 grams almond flour
  • 100 grams of coconut oil
  • 4 teaspoons raw cacao powder
  • 30 grams of coconut blossom sugar
  • 2 tablespoons agave syrup (or honey)
  • 1 teaspoon speculaaskruiden
  • 1/2 teaspoon baking soda
  • 1 teaspoon (tartar) baking powder
  • 20 grams dark chocolate (sugar free)

Chocolate chip cookies

    1. Preheat the oven to 160 degrees.
    2. Put the buckwheat flour, almond flour, cookie spices, baking soda, baking powder, cocoa powder and the coconut blossom sugar in a mixing bowl and scoop together.
    3. Melt the coconut oil in a separate container.
    4. Then add the coconut oil and the agave syrup to the dry ingredients and first mix it with a spoon and then knead the dough well with your hands. It will probably continue to crumble.
    5. Cover a baking sheet with baking paper and always press a large ball of dough. Cut out a cookie with a mold and remove the remaining dough. Add these leftovers to the other dough and repeat until your dough is finished.
    6. Bake the cookies for about 15-20 minutes and let them cool completely.
    7. Meanwhile, melt the chocolate with about 2 tablespoons of water so that the chocolate becomes liquid. With a spoon striped chocolate over the cookies and melt the mixture again if the chocolate cools too much. Let the chocolate harden and enjoy it! Watch out, the cookies are crumbling!
