Ingredients

  • 100 grams of almond flour
  • 160 grams medjoul dates (pitted)
  • 2 large tablespoons of cocoa powder
  • 16 strawberries
  • a few mint leaves for decoration

Chocolate cupcakes with strawberry

    How to make chocolate cupcakes with strawberry ?

    1. Peel the medjoul dates and put them together with the almond flour in the food processor. Run for a few minutes until finely ground.
    2. Add the cocoa powder and turn on for another 20 seconds.
    3. Put muffin tins in a muffin tin (or use small bowls). Take a handful of the chocolate mixture and knead until sticky. Then press this into the molds. Start in the center of the mold; if you flatten the dough, you will naturally get a bit of an upstanding edge already.
    4. Do this with four muffin tins. When you are done, put the muffin tins in the freezer for 20 minutes.
    5. Meanwhile, cut the strawberries into 4 pieces each. After 20 minutes, remove the pastries from the freezer and fill with strawberry. Remove the muffin tin and garnish with a top of fresh mint, if desired.
    6. Store in the refrigerator until you serve them.

This recipe is ideal for surprising your loved one during Valentine. Now you might think: "Hey, but why a Valentine's recipe for four people and not just for two? But the cupcakes are so tasty that you will beg you Valentijn for a second one and then you cannot stay behind yourself;)

Because they are raw cupcakes and the ingredients are not heated in, for example, an oven, all good nutrients are stored. You are just eating the vitamins and minerals from the almonds, dates and cocoa powder (and strawberries of course). So it is really a healthy 'pastry'. And in addition to gluten -free and sugar -free, the cupcakes are also lactose -free and vegan.
