Since we use the Tefal Optigrill, I regularly grill vegetables for sandwiches or snacks. These rolls of grilled eggplant with hummus are one of my favorites. It really is super simple to make: you can count the ingredients on 1 hand!

Ingredients

  • 1 eggplant
  • 3 tablespoons of hummus
  • two handfuls of arugula
  • salt and pepper
  • olive oil if desired

Grilled eggplant with hummus

    How to make eggplant rolls with hummus

    1. Wash the eggplant and slice it lengthwise. With a large eggplant, you can still cut the slices in half.
    2. Sprinkle the eggplant with some olive oil and salt and pepper. Place on the grill and brown on both sides.
    3. Spread the eggplant with hummus. Spread some arugula on top and then roll up the eggplant into a roll. Ready is your healthy snack!

The taste of grilled eggplant, hummus and arugula is a super tasty combination. You made them so much! It is also a perfect snack for the evenings. You can also make them in the afternoon, save in the fridge and then let them come up with temperature before serving.

For variety you can of course also use different flavors hummus. For example, make this red beet hummus or spread the rolls with aubergine dip Baba Ganoush. Just apply it, what you like!
