Nothing is better than ending a delicious Christmas dinner with an even more delicious dessert, right? I can really enjoy that. Take a break and then surprise everyone with a dessert that everyone enjoys. That's a successful Christmas dinner. In recent years we often take one course each with the family and last year I took two of these delicious apple-pear pies. This year I am again providing the Christmas dessert and going for this Panna cotta with blueberries.

Dairy-free panna cotta with blueberries

This delicious dessert is always a great ending to any (Christmas) dinner! And free of dairy and refined sugars too.

Ingredients

  • 400 ml vegetable milk
  • 125 ml vegetable cream
  • 3 tablespoons honey
  • 2 teaspoons vanilla extract
  • 4 grams of Agar Agar
  • 250 grams of blueberries
  • ½ lemon

How to make dairy-free panna cotta with blueberries?

    1. Put the vegetable milk, the cream and agar agar in a pan and bring to the kook.
    2. Let it boil for about 2 minutes (having a lot of bubbling) and then remove the pan from the heat. Add two tablespoons of honey and vanilla extract immediately and stir well with a whisk. Allow to cool to room temperature.
    3. When the mixture has cooled slightly, divide it over 4 trays or glasses. Put this in the fridge. The Panna Cotta needs a few hours to stiffen.
    4. When the Panna Cotta is set up, make the blueberry Coulis. You can do this through 250 grams of blueberries (frozen blueberries is also possible, let them thaw first) in a food processor to mix with a mixer with 1 tablespoon of honey and the juice of half a lemon. Allow to mix until an even mixture and divide with a teaspoon over the 4 trays or glass panna cotta.
    5. Put in the fridge and remove them for 5 minutes to serve to get up to temperature. Enjoy!

It is a super easy dessert to make and the good thing about it is that you can prepare it a day in advance. No stress with the Christmas dinner, because you simply conjure up these beautiful panna cotta's that you have already made beforehand. By possibly replacing the honey with (slightly less) agave syrup, you also make this recipe suitable for vegans.

The Panna Cotta needs a while to stiffen, certainly take a few hours for it. For example, it is really more convenient to make them in the morning, or even the day before, so that you know for sure that they will succeed.
