Breakfast muffins are very easy to make, they are healthy, convenient to take with you ánd you can vary them endlessly. There are already countless healthy breakfasts like banana egg pancakes, fresh oatmeal or the fantastic chia pudding. These muffins should definitely not be missing from this list!

Since St. Nicholas is back in the country, we thought it would be fun to give a St. Nicholas touch to these muffins. Speculaas spices and almonds are used, delicious to dream away to Christmas Eve. Or morning!

Sinterklaas muffins

The soft, spicy flavour is immediately reminiscent of gingerbread and filled speculaas, but in a light muffin that is perfect for breakfast.

  • Oven preheated to 180 degrees
  • Muffin baking tin
  • Muffin forms
  • Food processor or blender

Ingredients

  • 125 g oatmeal
  • 150 ml rice milk vanilla
  • 2 eggs
  • 1 banana
  • 1 tsp baking soda
  • 4 tsp. speculoos spice
  • 2 handfuls of plain almonds
  • 1 tsp. anise seed
  • 2 tbsp. honey
  • Pinch of salt

Sinterklaas muffins

    1. Put the oatmeal together with the eggs, banana, milk and baking soda in the blender and let it turn until a smooth mass is created.
    2. Now add 1 hand of almonds, 3 tsp. Speculaas spices, the anise seeds, salt and 1 tbsp. honey. Let it run again until all ingredients are well mixed.
    3. Put the papers in the muffin baking tin and fill the containers with the mixture. You can fill 10 trays with this quantity. Place the can for 20 minutes at 180 ºC in the oven.
    4. In the meantime, finely chop the other almonds and add the remaining gingerbread spices and honey. When the muffins are ready, you put some of the almond-honey mixture on top.
    5. In a closed container you can save the muffins for 5 days: perfect to prepare for the entire week!
