Almond flour is a superfood made from, how could it be otherwise, ground almonds. And that's also the only ingredient, so it fits perfectly within a gluten-free diet. You can make anything with it, but I especially like it in sweeter dishes, like cookies and cake. Or these gluten-free and sugar-free almond flour muffins, for example, are finger food!

Almond flour muffins

Almond flour muffins are a healthy and delicious treat, perfect for a gluten-free diet. The batter is made from almond flour, coconut oil, agave syrup, eggs and vanilla extract, supplemented with baking soda and tartar baking powder for an airy texture. The blueberries give the muffins a fresh, fruity flavor. After baking in a muffin tin at 150 degrees for 15-20 minutes, the muffins are fluffy and filling. You can also make them without blueberries, and they remain delicious! Perfect as a snack or even a light lunch, and they stay good for a few days in an airtight box.

Ingredients

  • 75 grams of coconut oil
  • 200 grams almond flour
  • 75ml agave syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon tartar baking powder (health food store)
  • 100gr blueberries

How to make almond flour muffins.

    1. In a large bowl, mix the almond flour, baking soda and tartar brick powder together. Then add the coconut oil, agave syrup, eggs and vanilla extract. Stir well until you have an even mass.
    2. Wash the blueberries well and then divide them through the dough and stir for a while.
    3. Do you have a baking tin for muffins? Then fill this with papers or silicone cake molds and divide the batter over 10 shapes.
    4. Bake the Blueberry muffins for about 15-20 minutes at 150 degrees.
    5. Let the muffins cool down after baking: they just cooled even better! In an airtight box you can safely keep the muffins for a few days.
