These banana bread muffins, naturally derived from the "standard" banana bread in the mouldof a cake, are easy to make and super tasty. The recipe is inspired by muffins also available in the supermarket. Today I am sharing this recipe with you to make them yourself!

Banana bread muffins

These baked goods are free of wheat, dairy, and refined sugar. For a gluten-free muffin, you can replace the spelt flour with a combination of almond, buckwheat, or rice flour, for example.

Ingredients

  • 150 grams of spelt flour
  • 2 ripe bananas (preferably a bit larger)
  • 3 medjoul dates, pitted
  • 2 eggs
  • 60 grams of raisins
  • 30 ml sunflower oil or olive oil
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cookie spice
  • pinch of salt
  • handful of chopped cashews

Banana bread muffins

    1. Preheat the oven to 175 degrees.
    2. If necessary, fill a muffin bin with the paper muffins.
    3. Puree with a hand blender Or in the food processor the bananas and dates and add the salt.
    4. Put this mixture in the food processor and beat together with the eggs.
    5. In a separate bowl, mix the spelled flour with baking powder, cinnamon and cookie spices and add this to the banana mixture in the food processor. Let it mix for a few minutes.
