A few weeks ago I was tipped off by my cousin about these banana pancakes. She had seen my almond flour-cinnamon pancake recipe and mentioned that she also had a very tasty and easy recipe for pancakes. I had to see that! Her note said, "You beat an egg and stir in a mashed banana. And then fry them in the pan like regular pancakes. Yes! The next morning I dived straight into the kitchen and baked these sugar-free banana pancakes. I was sold immediately!

A healthy and filling breakfast! With just two ingredients, you'll have these pancakes on the table in no time!

Ingredients

  • 1 banana
  • 1 egg
  • 1 large tablespoon of flaxseed
  • 1 teaspoon of cinnamon
  • 1 tablespoon grated coconut
  • possibly 1 tablespoon almond shavings

Sugar-free banana pancakes

    How do you make sugar-free banana pancakes?

    1. Mash the banana on a plate and whisk the egg in a small bowl. Then add the (well) mashed banana to the egg and mix well for a moment.
    2. Then also add the flaxseeds and cinnamon. Using a small ladle or gravy ladle, scoop the mixture into a frying pan on low heat.
    3. Let it fry well on one side and then carefully flip the pancake. If it is in danger of tearing, allow the pancake to fry a little longer.
    4. Also fry on the other side until the pancakes are nicely browned.
    5. Put the pancakes on a plate and garnish with some grated coconut, some more cinnamon and a little almond shavings. Do you have a few pancakes left over? Those are great for the next day or for the kids to take to school.
    6. Variation tip? Substitute banana for spinach and mix it with egg and batter to make a delicious iron-rich pancake meal. 

It appears that the recipe for this egg-banana pancakes is not undiscovered. There are several versions of it online! With 2 ingredients it is of course also so easy to make. In addition, it is super cheap, because you only need 1 egg and 1 banana. And with some linseed, cinnamon and grated coconut you have a healthy and filling breakfast.

And how does it taste? These pancakes without sugar fight together with the oatmeal porridge (overnight oats) for the honor of my favorite breakfast recipe. I really love them. They are fast, simple, healthy and super tasty. So highly recommended and certainly something to add to your list of breakfasts! Also vary nicely with the toppings. It's your breakfast party!
