This recipe uses spelt flour and almond flour and uses coconut blossom sugar. This is also a type of sugar, but unrefined and much more pure than white sugar. Of course, you should be able to just enjoy all the goodies that the time around Sinterklaas has to offer, but it can also be a little healthier! With this recipe, this traditional treat is suitable for vegans and people with lactose intolerance.

Equipment

  • oven preheated to 175 degrees
  • Baking tray
  • Baking paper
  • bowl

Ingredients

  • 150 grams of spelt flour
  • 100 grams almond flour
  • 70 grams of coconut flour sugar
  • 5 tsp. speculaaskruiden
  • 7 tbsp. melted coconut oil
  • 2-3 tbsp. vegetable milk
  • Pinch of salt
  • Pinch of ground vanilla

Healthy peppercorns

    1. Preheat the oven to 175 ºC and cover the baking sheet with baking paper.
    2. Mix the spelled flour with the almond flour and add the sugar, gingerbread spices. Add the coconut oil and vanilla and mix well. Now add 3 tbsp. milk.
    3. Now we are going to knead the dough! Don't forget to wash your hands try to form a ball of the dough: if it doesn't work because the dough is too dry, add some milk. If you have accidentally added too much milk, just add some flour again.
    4. Make sure you knead the dough well and then form small balls. Divide them over the baking sheet and put it in the oven for 15 minutes. Turn a gingerbread after 15 minutes: if the bottom is already very brown then they are ready.
    5. When the bottom is still fairly light, and you notice that the gingerbread cookies need a little longer, they can go for a few minutes. Pay attention: the bottom burns quickly.
    6. The gingerbread cookies are ready! Of course you can eat them immediately, but if you let them cool, they will become nice and crispy.
