This recipe uses spelt flour and almond flour, and coconut blossom sugar. This is also a type of sugar, but unrefined and much purer than white sugar. Of course, you should be able to enjoy all the goodies that the season around Sinterklaas has to offer, but it can also be something a little healthier! With this recipe, this traditional delicacy is suitable for vegans and people with lactose intolerance.

Healthy pepernoten

What's Sinterklaas without pepernoten? Exactly! But this time we're baking them a little differently: healthy and incredibly delicious. Crunchy, spicy, and made with pure ingredients you can snack on without feeling guilty. They're perfect for making with the kids, taking them on the go, or simply enjoying them shamelessly on Christmas Eve. A handful is never enough... but that's perfectly fine.

Ingredients

  • 150 grams of spelt flour
  • 100 grams almond flour
  • 70 grams of coconut flour sugar
  • 5 tsp. speculaaskruiden
  • 7 tbsp. melted coconut oil
  • 2-3 tbsp. vegetable milk
  • Pinch of salt
  • Pinch of ground vanilla

Healthy pepernoten

    1. Preheat the oven to 175 ºC and cover the baking sheet with baking paper.
    2. Mix the spelled flour with the almond flour and add the sugar, gingerbread spices. Add the coconut oil and vanilla and mix well. Now add 3 tbsp. milk.
    3. Now we are going to knead the dough! Don't forget to wash your hands try to form a ball of the dough: if it doesn't work because the dough is too dry, add some milk. If you have accidentally added too much milk, just add some flour again.
    4. Make sure you knead the dough well and then form small balls. Divide them over the baking sheet and put it in the oven for 15 minutes. Turn a gingerbread after 15 minutes: if the bottom is already very brown then they are ready.
    5. When the bottom is still fairly light, and you notice that the gingerbread cookies need a little longer, they can go for a few minutes. Pay attention: the bottom burns quickly.
    6. The gingerbread cookies are ready! Of course you can eat them immediately, but if you let them cool, they will become nice and crispy.
