Because the gingerbread turned out so well and tasted delicious, it was almost like a cake and I thought it was fine as a treat. The edges of the gingerbread are deliciously crispy and the texture is nice and creamy, just like a real gingerbread should be. It really is a good alternative to the gingerbread packed with sugar from the supermarket.

Rye gingerbread

Rye gingerbread is a delicious spicy breakfast or snack made from rye flour. This version contains cookie spices, cinnamon, ginger, honey and apple syrup for a rich flavor. The batter is mixed with plant milk, egg and baking powders and baked into a soft, fluffy cake. The kernels on top add extra texture. Perfect for serving with a layer of butter or just as is, and it will stay delicious in an airtight container for a few days!

Ingredients

  • 250 grams of rye flour
  • 200 ml vegetable milk
  • 2 tablespoons cookie spices
  • 2 teaspoons of cinnamon
  • 2 tablespoons honey
  • 2 teaspoons tartar powder
  • 1 teaspoon baking soda
  • 2 teaspoons apple syrup
  • 1/2 teaspoon ginger powder (or a piece of fresh grated ginger)
  • 1 egg
  • pinch of salt
  • some seeds to garnish the gingerbread

How do you make rye gingerbread?

    1. Cover a cake tin with baking paper.
    2. Put the rye flour, cookie spices, cinnamon, baking powder, baking soda, ginger powder and salt in a bowl, and mix well.
    3. Then add the milk and the egg and stir well. Then add the honey and apple syrup. Stir this into a smooth batter, possibly with the hand mixer or food processor.
    4. Pour the batter into the cake tin and garnish with some (sunflower or pumpkin seeds) container in about 50 minutes. If the top turns brown a little faster, you can cover it with baking paper.
    5. Let it cool down before you remove the gingerbread from the can. Save in an airtight box or drum, the gingerbread is definitely another day or 3-4 tasty!
