With only 7 ingredients, you can put this delectable quiche with spinach and feta on the table in no time. This tasty quiche is also vegetarian, thanks to the use of vegetarian chicken pieces. If you are not a fan of veggie chicken pieces, you can of course omit them. You can also replace them with cashews, for example, or by adding extra vegetables such as zucchini or leeks. This way you can make this quiche just the way you like it!

Ingredients

  • 500 grams of spinach
  • 5 eggs
  • 150 grams of feta cheese
  • 175 grams of vegetarian chicken pieces
  • 1 red bell pepper
  • 125 ml crème fraîche
  • 1 roll of savory pie dough or 7-8 slices of puff pastry

Quiche with spinach and feta

    How to make a quiche with spinach and feta?

    1. Preheat the oven to 180 degrees.
    2. Let the pie dough (or puff pastry) come to room temperature so you can use it more easily.
    3. Cut the bell bell pepper into cubes. Heat some oil in the pan and fry the vegetarian chicken pieces for about 5 minutes. Add the diced bell bell pepper and fry for about 3-4 minutes.
    4. Meanwhile, in a large pan, fry the spinach. It looks like a giant pile, but it shrinks tremendously. When all the spinach is cooked, squeeze it well with some kitchen paper; most of the moisture needs to come out, otherwise the quiche will be too soft.
    5. Now beat the eggs, with about half of the feta and the creme fraiche. Add salt and pepper to taste. 
    6. Grease the bake form with a little oil or butter and line it with the pie dough. Pierce some holes in the bottom.
    7. Spread the spinach over the bottom. Top with the veggie chicken-pepper mixture. Now spread the beaten eggs over the pie and garnish with the remaining feta.
    8. Bake in the oven for about 45-55 minutes until golden brown.

Tip!

When serving you can accompany the quiche with a light salad of mixed green leafy vegetables, cherry tomatoes and a simple vinaigrette. The freshness of the salad is a perfect counterpart for the rich flavors of the quiche. You can also cut the quiche into nice dots and serve as a savory snack during a festive occasion.
