The flavors are pure and besides, you have this bright mushroom soup on the table in no time. This mushroom soup is also nice to serve to guests as an appetizer at a (Christmas) dinner!

Well-filled mushroom soup

This simple mushroom soup is easy to make and super tasty! Well filled with different kinds of mushrooms and spring onions.

Ingredients

  • 2 liters of broth
  • 250 grams of chestnut mushrooms
  • 250 grams mushrooms
  • 150 grams oyster mushrooms
  • 100 grams of shiitakes
  • 2 cloves of garlic
  • 2 shallots or 1 onion
  • 2 spring onions
  • pepper and salt to taste
  • 1 handful of thyme for garnish

Well-filled mushroom soup

    1. Chop the shallot and squeeze the garlic with a garlic press. Cut the mushrooms and chestnut mushrooms small (in slices). Cut the spring onion into rings.
    2. Fry the shallot and garlic with some olive oil in a frying pan and then first add the chestnut mushrooms and mushrooms, along with a few sprigs of thyme. Bake nicely brown, the mushrooms will shrink. Add the noble mushrooms and shiitakes after about 5 minutes.
    3. Prepare 2 liters of broth in a large soup pot.
    4. Then add all the mushrooms to the broth, taste and season somewhat with salt and/or pepper. Serve in a nice bowl and garnish with some thyme and spring onions. Enjoy your meal!

Tip!

This mushroom soup is extra richly filled and by baking the thyme with the mushrooms, the soup gets a delicious taste.
