Ingredients

  • 500 grams of precooked beets
  • 50 grams of feta cheese
  • 40 grams of arugula
  • 2 tbsp pine nuts
  • 2 tbsp olive oil
  • juice of a 1/4 lemon
  • generous pinch of salt and pepper

How to make beet carpaccio?

    1. Beat a dressing of the olive oil, lemon juice, salt and pepper
    2. Cut the beets into wafer -thin slices with a sharp knife, cheese slicer or grater.
    3. Place the beat tongue slices on the plates and sprinkle with the olive oil dressing. Divide the arugula over the beet carpaccio.
    4. Divide the pine nuts over the 4 plates and garnish with feta.

In less than 10 minutes you can put this tasty vegetarian starter on the table and that makes it extra nice to serve at Christmas. Although it is so easy, tasty and healthy that you should actually put it on the table much more often. Nice on the weekend, as a "chic" starter.

Beets are super healthy; They contain many vitamins and minerals, including folic acid, vitamin C, iron and potassium. You can also serve beetroot raw very well and this beet carpaccio is also very tasty and even more beautiful with raw beet!
