I met Lianne on a press trip to Austria. We both love healthy food and we both have our allergies and intolerances. Enough food for conversation :). And so I found this recipe for gluten-free kaiserschmarren without sugar very appropriate.

Kaiserschmarren

A typical Austrian delicacy, but without sugar and gluten and vegan. These pancakes with fruit are delicious to munch away on a Sunday morning.

Ingredients

  • 75 grams of rice flour
  • 75 grams of almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • 125 ml almond milk (or rice milk, whichever you prefer)
  • 100 ml spa red (really. The carbonation gives the pancakes lightness
  • 1 diced apple (or several apples as desired)
  • Garnish as desired: for example raisins, nuts or some frozen fruit
  • for baking: coconut oil
  • possibly honey for over the pancakes (or sweet with maple syrup)

Kaiserschmarren

    1. Mix the dry ingredients in a bowl (spelled flour, baking powder, cinnamon and salt)
    2. Add the milk and spa red and stir well until a nice batter is created.
    3. Heat the coconut oil in the pan and fry pancakes of the batter. When the pancakes on both sides are light brown, put on a plate.
    4. Fry the apple pieces in the pan (sprinkle them in advance with some honey and cinnamon)
    5. Tear or cut the pancakes into pieces and add them to the apples after 3 minutes
    6. Bake everything until it has a nice brown color. Enjoy your meal!
