Airy turban apple cake

  • Bundt pan with a diameter of approx. 25 cm Mixer (hand mixer or food processor)

  • Sieve (for flour and baking powder)
  • Spatula (to stir the batter until fluffy)
  • Peeling knife and cutting board (for the apples)
  • Measuring spoon or teaspoon (for salt and baking powder)
  • Scales (for the ingredients)
  • Wire rack (to let the cake cool)
  • Skewer (to test if the cake is done)
  • (optional) Baking spray or butter and a strip of baking paper for greasing the pan
  • (optional) Sieve for sprinkling icing sugar over the cooled cake

Ingredients

  • 250 g sugar
  • 250 g butter (at room temperature)
  • 1 tsp vanilla extract and/or 1 lemon, zest
  • ¼ tsp salt
  • 5 eggs (at room temperature)
  • 250 g flour
  • 2 tsp baking powder
  • 2 apples (for example Jonagold or Elstar)
  • (optional) Icing sugar for dusting
  • (optional) Whipped cream or vanilla ice cream for serving

Airy turban apple cake

    1. Preheat the oven to 160°C (top and bottom heat).
    2. Grease your Bundt pan thoroughly with butter or baking spray and, if desired, line it with a strip of parchment paper. This ensures your cake comes out cleanly.
    3. Place the butter, sugar, vanilla extract (and lemon zest, if desired), and salt in a large bowl.
    4. Beat this mixture with a (hand) mixer for about 5 minutes until light and creamy.
    5. Then add the eggs one at a time and beat until smooth and fluffy. Only add the next egg once the previous one is fully incorporated.
    6. Sift the flour and baking powder into the bowl and gently fold it into the batter. Don't overmix, as this will keep your cake nice and fluffy.
    7. Peel the apples, remove the cores, and dice them. Fold them into the batter until they are evenly distributed.
    8. Pour the batter into your Bundt pan and smooth the top.
    9. Bake the cake in the center of the oven for about 60 minutes, or until golden brown and cooked through.
    10. Check with a skewer: if it comes out clean, your cake is perfect!
    11. Let the cake cool in the pan for 10 minutes, then carefully invert it onto a wire rack. Leave it on the rack.
    12. Dust the cake generously with powdered sugar for a festive look. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
