Although there are occasional showers and not so nice days, the sun continues to shine nicely in recent weeks. And with sunshine, I always get a craving for cold dishes, such as a fresh meal salad. So today a recipe for a Summer meal salad with salmon and potato, which in addition to being gluten-free is also sugar-free and dairy-free.

Summer meal salad with salmon and potato

When summer has arrived and the sun is shining, it's time for a meal salad. No hot snack for a while, but nice and fresh!

Ingredients

  • 600 grams of small boiled potatoes (may be peeled)
  • 200 - 250 grams smoked salmon fillet
  • 400 grams green beans
  • 200 grams of peas
  • 2 spring onions
  • 2 tablespoons capers
  • 2 sprigs of chives
  • 1 tablespoon of mustard (note: sugar-free)
  • 2 tablespoons mayonnaise
  • juice of 1 lemon
  • a few leaves of fresh mint
  • pepper and salt

Summer meal salad with salmon and potato

    1. Kook The potatoes or use pre -cooked potatoes. Kook Also the string beans.
    2. Cut the salmon fillet into small pieces. Also cut the spring onion into rings and finely chop the chives.
    3. Make the dressing of mustard, mayonnaise and lemon juice in a container. If the dressing stays too thick, you can add a little bit of olive oil.
    4. Then mix the potatoes with salmon fillet, string beans, peas, capers, chives, spring onion, mint and dressing. Add salt and pepper to taste. For example, serve with a nice piece of fish from the barbecue.
