I was allowed to choose a recipe from Anneke's blog. That turned out to be quite a task, because there were a lot of delicious things to choose from! Soon I came across a beautiful picture of fried shrimp with avocado and peppers. The colors really appealed to me and besides, it is a very 'pure' recipe and I am a big fan of eating as pure and clean as possible. My choice was made: shrimp on a bed of avocado and peppers.

Shrimp with avocado mousse and bell bell pepper

Shrimp with avocado mousse and bell bell pepper is a fresh and flavorful appetizer that is perfect for dinner with girlfriends. Ripe avocados are mashed with lemon juice, salt, pepper, and sautéed diced peppers, then garnished with crisp arugula. Large shrimp are sautéed briefly with garlic and olive oil, then presented beautifully on top of the avocado mousse. This dish not only offers a delicious combination of flavors, but also looks beautiful on the plate. Perfect for a quick, easy and impressive meal.

Ingredients

  • 6 large shrimp
  • 2 ripe avocados
  • 1 red bell bell pepper
  • 1 yellow bell bell pepper
  • handful of arugula melange
  • 1 spring onion
  • quarter red pepper
  • juice of half a lemon
  • 2 cloves of garlic, pressed
  • olive oil
  • sea salt
  • pepper

How to make shrimp with avocado mousse and peppers.

    1. Cut the peppers into cubes and fry garlic in a frying pan with a minced meat clove.
    2. Remove the flesh from the avocados and prick this. Add the juice of half a lemon, some salt and pepper and about half of the paprika bugs.
    3. Heat some olive oil with a pressed garlic clove in the frying pan and fry the shrimp briefly until they become nice pink/light brown. Sprinkle with some salt and pepper and sprinkle with a little lemon juice.
    4. Place a serving ring on a plate and scoop the avocado mixture, press and remove the ring carefully. Place some arugula on top and then the shrimp. Put some paprika bugs around it and some arugula for garnish. Enjoy your meal!
