A nice patatje mayo is indispensable in Dutch culture. Such a pointy bag full of salty and crispy fries with a nice blob of sauce. Unfortunately, this is not really a conscious choice, but that doesn't mean you have to miss out on fries completely. In fact, sweet potato fries are a delicious alternative! They are packed with complex carbohydrates that make you feel satiated, the low Glycemic Index keeps blood sugar stable, and sweet potato is also full of vitamin C and vitamin B6!

Sweet potato fries

These sweet potato fries are a healthy and flavorful version of regular fries. With thyme, oregano and sea salt, they are deliciously crispy from the oven. Perfect as a side dish or snack, and when combined with a fresh salad complete!

  • French fries cutter or peeler
  • Baking tray with baking paper
  • Deep plates

Ingredients

  • 4 sweet potatoes
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon oregano
  • 1 tablespoon sea salt
  • 3 tablespoons fresh thyme

How do you make sweet potato fries?

    1. Preheat the oven to 175 degrees.
    2. Wash the potatoes and cut them into fries. They can do both with or without peel, but I like the peel.
    3. Mix the olive oil with the oregano, thyme and the sea salt. Hussel through the fries. I always make sure that I cover them well in the olive oil and herb mixture, so they become nice and crispy.
    4. Spread the fries over a baking sheet with baking paper and bake for 20 minutes.  Then turn the fries and bake for another 20 minutes. After this they are ready to eat! Delicious with homemade Mayo (from egg (yolk), (wite wine) vinegar, sunflower oil, mustard and salt).
