These apple bars are awesome. They are full of good nutrients, are super easy to make and therefore a heart healthy snack. Add to that the fact that they are easy to pack to take with you somewhere and in my opinion, then 'tis perfect. Use oatmeal with a gluten-free label and your bars will be gluten-free, vegan and sugar-free.

Apple Bars

Make a whole mountain and store them in the fridge; then you always have a quick and healthy snack!

Ingredients

  • 115 grams of pecans
  • 150 grams (gluten-free) oat flakes
  • 200 grams of pitted medjoul dates
  • 2 teaspoons of cinnamon
  • pinch of salt
  • 2 apples

Apple Bars

    1. Preheat the oven to 175 degrees.
    2. Pit the Medjoul dates and put them in a bowl of water for 15 minutes to make them soft.
    3. Cover a baking sheet with baking paper and spread the pecans and oatmeal over it. Bake in the oven for 15 minutes.
    4. Drain the dates and put them in a food processor (or hand blender) and also add the apples (first cut them a little smaller). Grind fine.
    5. Then add the oat flakes and pecans, and the cinnamon and salt and grind to a whole.
    6. Take a brownie baking tin or other square baking tin with slightly raised edge and add baking paper here. Spread the apple mixture over the baking tin and press.
    7. Bake for another 20 minutes at 175 degrees in the oven. Let cool and then cut into strips. You can store them for a few days in an airtight container (in the fridge).
