Sweet potato & cauliflower from the oven

Sweet potato and cauliflower from the oven with garlic and rosemary is a simple and flavorful dish. Diced sweet potato, cauliflower florets and red onion are mixed with a marinade of olive oil, lemon juice, garlic and rosemary. After 25 minutes in the oven, the result is a delicious roasted meal with a fresh and spicy flavor.

Ingredients

  • 2 large sweet potato
  • 1 cauliflower
  • 2 red onion
  • 2 garlic cloves
  • 2 sprigs of rosemary
  • Juice of 1 lemon
  • 8 tbsp olive oil
  • Salt & pepper from the mill

How do you make cauliflower with sweet potato?

    1. Preheat the oven to 180c.
    2. Clean the sweet potatoes well and cut them into cubes.
    3. Cut the cauliflower into florets. Cut the red onions into 8 pieces.
    4. Mix the olive oil in a bowl with the squeezed garlic, lemon juice and finely chopped rosemary.
    5. Divide the sweet potato, cauliflower and onion over the baking sheet and mix through the oil/rosemary mixture.
    6. Put the baking tray in the oven for 25 minutes (between 20 and 30 minutes, keep an eye on whether the sweet potato is already cooked).
    7. Spoon everything in between at least once.
