Unfortunately not mega healthy and it takes some time in the kitchen to prepare a good melanzane parmigiana. After a long working day not really something I am in the mood for. So these vegetarian wraps with eggplant and tomato sauce are a great alternative!

These vegetarian wraps with eggplant and tomato sauce are a tasty alternative to melanzane parmigiana. With only 5 ingredients, you can easily have a quick and delicious dinner on the table.

  • 2 eggplants
  • 2 handfuls of arugula
  • 4 wraps
  • 1 packet of passata
  • 2 handfuls of grated cheese
  • olive oil
  • pepper and salt

Vegetarian wraps with eggplant and tomato sauce

    How to make vegetarian wraps with eggplant and tomato sauce?

    Preheat the oven to 180 degrees.

    Cut the eggplants lengthwise into slices about 1.5 cm thick. Sprinkle with olive oil, salt and pepper and grill for about 20-30 minutes in the oven. Of course, you can also grill the eggplants in a pan.

    Spread the wraps with passata and sprinkle some grated cheese on top. When the eggplant slices are ready, put them on the wrap. Now add a little cheese, some arugula, salt and pepper and then roll up the wraps.

    Stick a skewer through and your vegetarian wraps are ready! It is also possible to heat the wraps in a frying pan for about 1 minute.

When I came across a series of recipes that only consist of 5 ingredients, I was inspired. These are not too complicated so and that is nice for weekdays. The taste of roasted eggplant and tomato sauce is really a heavenly combi and therefore it has a lot from Melanzane Parmigiana.

Tip: of course you can always add some fresh herbs to give the wraps even more taste. Nice here is, for example, some rosemary, thyme, oregano and basil. Preferably fresh, because this provides more taste, but dried is certainly always possible in the winter.
